Are there any 40K books from the perspective of the orks? Or Chaos? For whatever reason, I just think that would be really, really interesting.

Orks? None that I know of. The closest you are going to get for Chaos is the book "Lord of the Night" (which is a very good book, mind you). After that, you probably want to look into some of the Horus Heresy books.
