Read all of them, there are not much anyway unfortunately. At the mountains of madness is the most complete work by him though, don't rush it.

The Dream Quest of Unknown Kadath is also quite excellent, but I'd recommend reading it once you have a feel for his writing style. And lots of free time, since it's almost 100 pages without any real break in narrative.
Also, OP, a good starting point for his stuff is The Rats in the Walls.

I've been currently getting into him as of a week or two ago, and I'm pretty fond of The Call of Cthulhu, The Colour out of Space, and Herbert West-Reanimator. I'm almost finished with The Dunwich Horror, and it's been pretty fucking awesome as well.

I thought The Whisperer in Darkness was great. I heard it's being made into a silent movie at the moment by the same guys who did the Call of Cthulhu silent movie.

Start of small with some of his shorter stuff like Rats in the walls, the outsider and Pickmans Model.
Also, on the subject of Call of Cthulhu, it is a decent read, but I personally found it a bit disappointing.
I think largely in part to Cthulhu's hype/use in pop culture.
