There are stories where the interaction between the characters and their surroundings is more important than any kind of plot. In these stories, the character can wander aimlessly and do aimless things but still be compelling to read. The Hitchhiker's series could be described as this. What other books are more character driven than plot driven?

That's what I've always loved about the Discworld books. The books are about the characters, the plots just happen to be something that's happening to them at that point. Most books tend to be focused around the plot and the character's only purpose is to get from A to B as the story requires.
