you mean like episode director? Usually you can tell if they do storyboard. Stuff like framing each shot, the angles, even the art direction can be influenced and traced back to the episode director. Yamauchi is like 101 material for this, just watch any of his episodes and you'll get a hang of it

it helps if you know theory behind cinematography, you'll be able to understand "direction" and the likes better
