Magi has obviously more rushed scheduling, and while episode 1 looked great, second episode was pretty mediocre. In fact, SSY looks MUCH better than Magi.

I don't watch Magi, so I have no idea. It's just that the staff list seemed more impressive in Magi. I'm glad that SSY is more consistent.

Well, if you actually have been paying attention to SSY since it was announced you would realize that they are actually really, really, really ahead on the schedule. The PVs from Summery show scenes that shouldn't happen until episodes 6-7! Plus the PV that people used to guess the Yamauchi episode (5) etcetera.
Looking at this, you're right. At the very least they had done quite a few episodes by Q2 of 2012. How much of a head start does a typical anime have when it comes of production schedules?

Depends on the studio and who does the planning.
Bones are generally quite good. An extreme example is Heroman and that was produced over 2 years before it aired, when it did, all the animation was completed.
Something like Eureka AO was on a pretty tight schedule and animation was still completing a day or two before each episode went on air.
SHAFT are not known for keeping good schedules, they have some terrible planning departments.
KyoAni of course have great scheduling and a legion of animators to back them up.
