Absolutely nothing to do for the next 3 weeks, so I've decided for the first time ever to delve into the world of anime.
What's really popular out there?
What are your favorites?
How would I go about watching these animes?
P.S. erotic content is fine (appreciated =D) but only as long as it doesnt take precedence over the plot, so dont give me hentai please.

As for picking one you like, search for plot summaries to tell the general genre, but I we can probably steer you better if you'll tell us what you're looking for, for example answer questions like these:

Episodic/epic?

Period? (past/present/future)

Target audience? (G, PG, R)

Humor (serious(completely), intermittant/mild, slapstick)

Action/drama/romance?(all shows have drama I spose, but some have no 'fighting' so to speak).

I dunno, there are probably better metrics for classifying preference, that's just a few off the top of my head. My point with that is that there's a whole lot of popular anime, and if you narrow your aims you might get better results.

Lastly, how to go about watching them... Do you mean how to get them? Well, since the 'popular' anime generally is all lisenced in the US, downloading them is possible, but not legal. Rent/buy/borrow? The movies and fruits basket you can watch with the english sound(dubbed). In general though, if you have an option, subbed is generally considered to be better(because the dubs are generally really terrible voice acting).

As for erotic content with plot, if you mean fan service (randomly seeing characters naked) that happens often enough, if you mean a full on hentai scene worked into an otherwise 'normal' plotline, nothing comes to mind (though I'm not the otaku that some are).

I actually watched Evangelion (+ EoE) first and while it did confuse me, its bizarreness got me interested in anime.

Had I watched one of those boring schoolkids comedy shows people here seem to be so obsessed with first, I'd never have given anime a second chance.

The others are fine.

Outlaw star is a decent low-budget CowboyBebop show.

FullMetal Alchemist was decent, though may be too childish-angsty at some points. Try the manga for that series.

Hellsing was decent, mostly flair, you won't find the meaning of life in it though.

There are some hentai that have coherent plots that aren't totally about sex, but, sex is typically a large part of it. These might meet your criterion, in that the plot isn't just stringing along the sex, there is not rape, etc.
Can Can Bunny Extra is a good "erotic anime" - (think AMG), sex is not TOO graphic

Kohime (I beleive that is the correct spelling) is a short (like 1hr) hentai with an actual plot. Sex is more graphic I wished they had kept going, since they managed to create characters that you might actually care about, but they still did a good job of wrapping it up in two sort episodes.

Naruto= My favorite. (THE FUCKING FILLERS NEED TO END) The dubbed version is horrible, but the real subbed anime is great. There are about 60 episodes of fillers, but about the first 110 or so episodes are filler-free except for 1 or 2 in between. (for those of you who dont know, fillers are really shitty episodes that jump off the storyline for purposes that you dont speed up to the manga too fast.) I recommend this anime. You can watch this, and other animes, on youtube, just by searching "naruto episode #", or you can torrent.

Hmm, let's see...

Outlaw Star got me into anime. It's like a poor man's Cowboy Bebop, but it's fun, simple and great fun. It would be a fantastic show to start with, or you could just go with Cowboy Bebop if you like.

I'd have to say that OS has more of a "Star Wars" feel to it whereas Cowboy Bebop seems to owe more to American Westerns and gangster/mafia films.

Watch Voices of a Distant Star (Hoshi no Koe 【ほしのこえ】) in Japanese with subtitles. Cry. 30 minutes.
Then, watch The Place Promised in our Early Days (Kumo no Mukou, Yakusoku no Basho 【雲の向こう、約束の場所】) in Japanese with subtitles. This one didn't make me cry. 2 hours.

If you want something that's popular at the moment you should probably go watch something like Fullmetal Alchemist, Bleach, Naruto, One Piece or Inuyasha. Watch them if you're the type who completely bypasses great anime just because it wasn't made within the past 7 years or so. Oh and I don't want to start an arguement or anything but watch subs unless you really want to be an anime n00b in which case you might prefer dubs - only anime n00bs watch dubs.

Hellsing = Vampiric DRAMA and Elfen Lied is ACTION? Hellsing had many dramatic elements, but it was more action oriented and often those dramatic elements were used to enchange action. Elfen Lied on the otherhand is kind of like drama, harem and action(although not so much). I would describe bizarre mix as harem series for gore lovers and I liked it.

Why not go to the AniDB site - you can list animes that users have rated the highest quite easily, and sort by genre etc.  Being a n00b or not doesn't make much difference after you've watched a couple of shows
