Is mushishi still differnt every episode? Or has it actually got a plot now?

It's different from episode to episode, as far as I've seen.
That said, it's one of the best animes I've ever seen and you should watch it regardless.

Yes Mushishi is one of those anime which is composed of vignettes, very much like Kino no Tabi; you have the main character who travels around and each episode is one of his/her experiences. However, like in Kino, the stories in Mushishi are indeed interrelated, and you see this through Ginko. Chapter 7 of the manga (episode 20 of the anime) in particular is a consequence of prior chapters/episodes.
This isn't like Rumiko Takahashi theater in which some characters make cameos but each story has nothing or little to do with the other. The stories of Mushishi each reflect something about Ginko, and as time goes on, you can see a sort of pattern emerge. The continuity of plot is obviously not obvious; but there is a continuous theme that connects the episodes.

Bebop is another example of an "episodic" series that is nevertheless connected throughout every episode. That said, the links between Mushishi's episodes are far more nebulous right now. This of course does not mean that Mushishi is not brilliant, because it is.
