Milk, eggs, dash of seasoning (I go for a bit of pepper) and pour into the pan when it's warm, with a wooden spachela, have a go around the sides to keep checking how it's cooking. When the base has browned a bit, feel free to either flip it or turn the side in making sure to check it's cooked right through. Put filling in, turn the side in on itself and serve!
