cat /dev/null /dev/sdb

won't work, there is no data to be read form /dev/null.
Use /dev/zero instead.
And use dd instead of cat, works faster.

dd if=/dev/zero of=/dev/sdX

If you want to erase completely the data (so that even Ontrack won't be able to recover it) use the shred utility.
Shred is a core unix command for safe erase.

sysresccd.org has a very nice live cd with this stuff
