No, I don't wanna use iTunes or WinAmp.  Should I use Daemon Tools or something?  Can Alcohol do it?

EAC + LAME is your best bet. Go do that now.

Daemon Tools creates virtual optical drives and mounts images to them. No idea where you pulled that from.
