So I'm doing a bid proposal for a plant engineering project. It's just school work, but what would be an appropriate profit percentage for my 'company'? 15%? 20%? 25%?

There's no such thing as an appropriate profit percentage.  You have to underbid the other applicants while still maintaining some profit for your company, no matter what the percentage.  Welcome to economics (those business classes could help just about now, couldn't they?).  Better product, cheaper price.  The free market rules!

Or, just shoot for 30%, and go no lower than 15%.  At least that way, your firm isn't busting its ass for peanuts.
