Could a person choose to become homosexual after being fed up with the opposite sex?

No.

No but you can become asexual through philosophy such as Plato and and Leonardo De Vinci.

I imagine consciously changing your sexuality would be very difficult.

Yes and no, depending on definition. If "yes" is true blue sexual attraction, then maybe not. If "yes" is just sexual action, then yes.
