Uh, quantum physics is so widely accepted precisely because it makes accurate predictions. It may not have been empirically deduced, but there's plenty of empirical evidence. As for string theory, they're still working out the math, so devising an empirical test is way down the road. You can't test a theory's predictions if you're not quite sure what they are yet.
