Is it possible to decrypt their traffic? There is some way with Tor exit nodes, but I2P seems harder.

In practice, no. Also, it isn't possible with TOR either, the exit node traffic simply isn't encrypted. I2P is similar to TOR hidden services.

You can always setup out proxy and sniff it. But why would you do it?
