I'm used to mailman with courier-IMAP but I'm not really sure what most of industry uses as their mail daemons.  What do you guys think is the most popular?

is not a mail daemon is a mail client
if you are running exchange server under wine you now have over 9000 problems

Most likely postfix, courier or sendmail.  Personally, they all suck and are incredibly finicky.
Though honestly who gives a shit what other people use, because if you have a mail system that works and decent admin scripts... You sure as shit aren't going to start messing around with it, and decide to change software.

There needs to be a viable replacement to a 30 year old protocol that seriously showing it's rust.
