The one I work for bitches about cross contamination so throws everything questionable out, and is always worried about the appearance of the restaurant, YET WHEN YOU EMPTY THE DISH MACHINE IT EXPLODES ALL OVER THE PLACE...over the recently-cleaned dishes even. He claims it would cost too much to fix it. I'm like, wait, wasn't he just bitching about germs and shit an hour ago? It's even worse on the cooking line, it takes ages to cook anything because he makes us change plastic gloves in between each and every piece of food we handle, but waitresses aren't required to wear gloves, and neither are the busboys (who regularly get the water for waitresses while they're taking orders.) So your food comes out perfect and some skank who was mining for gold earlier causes you to get indigestion or worse. Then there's the fact nobody since the store opened, whenever that is, has ever cleaned the walk-in freezer, and he isn't about to start the trend. I hate inconsistant fuckers.
