I eat almost everything deep-fried

About 6 months ago, we got a Delonghi deep fryer. It took a little working out, but after we started buying the good ADM oil in bulk at Costco, everything became delectable. Thing is that if you do it right, it doesn't come out oily. You have to cook at a high temperature, and then the food is cooked by the oil, but not saturated in it. It's no worse than doing a pan-fry on the stove. The difference between even good restaurant fried chicken, like Popeye's, and good homemade stuff is night and day. And fries actually come out tasting like potato, not like corn oil like Wendy's fries.

You know there's a difference between the way fast food places do it and the way the fryer makers actually recommend it. The way McDonald's makes its fries is this: you dump the fries into the oil, THEN hit the button to heat it up. The result is that they get soaked in the industrial oils, which means all that nasty stuff gets left in the food. If you heat up the oil first, hardly any of it will transfer to the food. I can eat a whole meal of chicken nuggets done at home, rub my fingers together and they won't be greasy. That means I'm eating the food, not the oil.

The oil itself is nasty, but if you do it right, it stays mostly out of your food.
