Are there language immersion programs that let you start from 'square one'?

Rosetta Stone, but it has completely garbage grammar lessons. In fact, they really aren't distinguished between them and the vocabulary lessons, but, to answer your question, Rosetta Stone would be a good choice if you seek such a thing.
