I have played Progear and DoDonPachi (though I'm not sure if they are these) on MAME but I want more!
FILL MY SCREEN! FILL MY SCREEN WITH BULLETS!!!

X.X game studio has some fun (albeit easy, with meh graphics, bullet hell games)

Warning Forever is also good though not exactly a bullet hell game.

There's about a million of em, only about 30 or so have titles in characters you can read, still fun shit though.

Blue Wish Resurrection(sp?) & Eden's Edge are pretty fun and take quite a few pages from Cave's games.

DonPachi (older game which DoDonPachi is the sequel of),  Gigawing and 19XX all emulate quite well on MAME and play nicely. Cyvern has some minor visual issues but also plays quite well.

The shmups.com forums would probibly a good place to look for shooters.

If you like Warning Forever there's also Fraxy which is also all about blowing the ever loving shit out of an endless parade of bosses.
