Cappelini with pomodoro sauce!
Cappelini is angel hair pasta. You just boil it for a minute or two, it comes out al dente. You'll want to cook it last, of course.
For the pomodoro sauce, you will need:
fresh plum tomatoes (you know, the ones about the size and shape of eggs)
fresh minced garlic
fresh chopped oregano leaves
fresh chopped basil leaves
just a splash of olive oil.
All these proportions are to taste, needless to say.
Chop up the plum tomatoes. Dice them in maybe 1/4" pieces or a little smaller. Mix with the other ingredients and store it COLD until just before you're going to serve it.
Prepare pasta and put it on a plate, still hot. Microwave some of the sauce, or warm it up quickly and gently in a nonstick pan and put it over the pasta. JUST WARM IT, we don't want to actually cook it--that would make the tomatoes lose their fresh tomato flavor, which is the centerpiece of this sauce.
Put the sauce on the angel hair pasta. Maybe sprinkle on a little grated Parmesan cheese and put some fresh parsely on top of that as a garnish.
Makes a great main dish for a light meal, wonderful on summer days. Goes nicely with garlic bread, a light salad, fresh fruit for dessert, and a dry red wine.
