Italian recipes .

Hi I need some good simple italian recipes preferably with meat/fish and mozarella.

Chicken saltimbocca!
Take chicken breasts. Slap on some salt and black pepper.
Dip them in flour, then in egg, then in breadcrumbs.
Deep-fry until they're cooked about 2/3 through (this isn't that exact, so don't sweat it).
Let them cool and heat your oven to 350 Fahrenheit.
Take some pieces of mozzarella and wrap slices of prosciutto around them.
Slice the fried breasts lengthwise and put in the mozzarella/prosciutto rolls.
Bake in the oven for about half an hour.

I recommend a lighter Chianti with this. Have fun!
