actually i don't know if it was prepared the same way as how your japanese prof had eaten them, but fish eyes really didn't have much of a taste and there was a solid ball of something leftover (sry IANAA or i am not an anatomologist  =P).  have you ever eaten cow testicles?  one of my friend tried them in China and i can tell you i would be seen near those fried balls.
