I don't like nailing myself down to one 'best' cheese. My preferred cheese is highly dependent on what I'm using it for.
For cheese and crackers? Thick slices of jalapeno havarti.
For snacking? Cubes of smoked gouda.
For grilled cheese? Kraft Singles.
For cookies? Shredded 3-year aged cheddar.
For pizza? Thin slices of mozzarella and medium cheddar.

I must say that Stilton is the best cheese around. Cheddar also is fantastic. Really all British cheeses stand out. They are by far the greatest of all cheeses.
