english stilton is great. i love all stinky cheeses, blue cheeses, etc. i have a pound of limburger in the fridge right now! i get it shipped from wisconsin. for me, strong cheese is almost like fine chocolate.

All this cheese talk is making me hungry.  I'm gonna go make a fine-ass grilled cheese like I saw on Good Eats...

~Spread some dijon or spicy mustard on bread
~Add shredded cheddar cheese
~Baste exterior of sandwich with olive oil
~Sprinkle with Italian seasonings
~Grill and enjoy :)

Last week at work we had a meeting and, dopey and pointless though the meeting otherwise was, we had a free lunch catered by a local deli.  I had a very nice rare roast beef sandwich on crusty French bread with slices of very nice Swiss cheese on top.  I have to like a job where we get free food for showing up at meetings, even if the meetings are kind of dopey.

And let's not forget the unsung hero of the cheese world...  VELVEETA!

Now technically Velveeta isn't a cheese, it's a food product made out of cheese.  But it's still good and it melts perfectly in the microwave for when you make queso dip.  And to make your queso extra tasty, try pureeing the salsa before you add it to the sauce.  It really releases the flavors in the peppers.

Velveeta is a blend of Swiss cheese, Monterey Jack cheese, mild cheddar cheese, and cream cheese, created originally for use in the food service industry.  Its purpose is to melt easily and evenly for use in dishes requiring cheese sauce, such as macaroni & cheese, or nachos.  Actually putting a slice of Velveeta on a sandwich was never what the designers intended, though.

It is real cheese, though you are right when you say it's also a food product made from cheese.

Can anyone recommend a good American cheddar brand? I'm not talking about the cheap processed Kraft singles...something like what they used to use in the older McDonalds cheeseburgers before they changed the recipe for the worse some 20 years ago (don't know if the cheese is different now, but I'd bet on it)...

Ew, processed cheese. Go with a block of extra extra extra sharp Cracker Barrel cheese, that shit is DIVINE. The sharper it is, the more it makes your mouth pucker from just the smell, when you take it out of the package and you can see the cheese sweating... THAT, my friends, is the best cheese known to man.

And merely thinking about that cheese is making my mouth water up so bad you have no idea, I want some now :(

Cheese keeps me fat and stinky. Its really the only thing I havnt been able to drop compleatly from my diet. I dont drink soda, eat sweets, eat fatty foods, beef is something i have incredibly rarely.

But that damn cheese! I love it. I want more of it!

Huntsmans cheese is my favorite.  I have seen it for sale as Double Gloucester Blue Stilton too.  It is a layered cheddar with the stilton blue chesse in it.  The combination of the richness of the cheddar and the bite of the blue makes it great.
