Do my server machine has to have two NICs? Or how do I connect my switch to the server and then server to the Internet?

DSL/Cable modem >> Switch << all other computers.
Note: If your ISP only provides just 1 IP, only one of your devices will have internet access. If you need more than that online, you'll have to get a router.
