Video Capture Programs

I'm looking for a video capture prom that will let you just watch the video as it streams in.  I have a 7900GT that can capture s-video port.  So far I have used thee crappy windows video editor just to make sure the drivers and everything where working. 

A program that doesn't actually cature but just plays it would be bonus since I don't intend to actually record.  I just want to play games across it or watch some TV.
