If what you mean is running a multi-monitor desktop, then yes, your graphics cars must support it, most new ones do, and most new ones have dual outputs, one VGA and one DVI, or two DVI's usually.
For three or more monitors, you'd need either a specialised graphics card like some of the funky Matrox ones, but guessing you want to be able to use it for gaming, that's not for you. for a secondary graphics card if not meant for gaming, just get some cheap PCI card that supports the resolution and refresh rate you want.
Me, I'm running two monitors on a Radeon X700, working fine.
