Hey guys, does anyone have a recommended software that makes pdfs from a document scanner? not adobe acrobat, is there a good opensource alternative for windows?

You don't want to make useless PDFs from useless paper sheets. If you're bothering scanning, you want to turn useless paper into something useful, like a text file or an HTML+CSS file, or even a Word file, but something anybody can easily edit, copy, process, etc. at least. PDF is for fags.

its for documents, basically to mimic a fax over email

no use beyond platform-independent consistent document rendering for the purpose of printing is required

but in general you're right

Maybe you want something like this (found it via a quick google search):

http://sourceforge.net/projects/pdfcreator/

It's also opensource (GPL).
