Voltage

Recently, I started taking an interest in the output of Asus Probe 2.  I noticed that alot of the voltages are way out of line.  the 12v seems to hover around +8%, and 5v and 3.3v are around +5%.  Is this bad?

No. That's about normal.

As long as they're within .5v of their target, it's fine.  If you get undervolting, you'll start to have oddball problems with your system.
