The Early Stories: 1953-1975 by John Updike. Though it's a massive book, the prose is outstanding and I really enjoy how the stories are split up by topic.

Robert E. Howard collections are the best collections. Go get some Conan collections or Solomon Kane.

Have it on various authorities that Raymond Carver is God-tier.
Myself, I've read a few of Chekov's short stories and they blew me away with their understated naturalism. There's one called "Talent" which should be required reading for budding writers or indeed budding anythings. Check Project Gutenberg for his stuff.
