Try Patrick O'Brian's Aubrey-Maturin series, or C. S. Forester's Hornblower.

Red Sea Under Red Skies by Scott Lynch largely takes place on boats, but its the second book in the series so you'd probably want to read the first.

The Scar by China Mieville might appeal to you if you're into weird fiction as well as seafaring. It's definitely got old fashioned galleons and crows' nests, but it's also got a giant "city" made up of tying captured ships together and having a fish as big as a continent drag it along.
