Not that I'm a butthurt shounenfag but how come they're considered shounen?

Yeah I understand that shounen is everything for 13 to18 year olds and that makes sense but how come I never hear any distinction between the young shounen (Pokémon, Yu-Gi-Oh!, etc,) and the old shounen?

Because they are published in a magazine with a audience in that year range. And sometimes the manga can be considered something else than "just"  shounen but that has more to do with the elements present within the manga and less about which publisher it belongs to. That said many publishers like Weekly Shonen Jump have their distinctive rules set of where the authors can and cannot go with their manga.
